Formerly the Culinary School of the Rockies, Auguste Escoffier School of Culinary Arts (AESCA) was founded in 1991 in Boulder, Colorado. The school offers a range of programs for those who are interested in culinary arts. These include professional diploma programs as well as classes for food lovers. The Auguste Escoffier School of Culinary Arts programs offer small class sizes, years of experience, and experienced faculty; which make them a top choice to pursue an education in the field of culinary arts. Auguste Escoffier offers a variety of learning options including culinary arts programs that span over 6-weeks. In these programs, students get a chance to learn to cook locally-sourced ingredients and meet farmers, ranchers, producers, and purveyors. The programs helps students acquire in-depth knowledge of where food comes from, and learn about the benefits and intricacies of sourcing local, seasonal food.

A pastry arts program is also available that take about 32-weeks to complete. This program is available in Austin, Texas and Boulder, Colorado. The program is designed to fit the schedule of individuals from all backgrounds, and prepare students for opportunities in the world of pastry and baking.
